Simple & hearty
Tomato & parmesan pasta soup
A simple, easy and quick to prepare hearty meal in a bowl - delicious any time of the year!Serves 5-6
Ingredients
- 2 carrots, diced
- 1 yellow pepper, diced
- 10 cherry tomatoes
- 550g Cottage Delight Tomato & Parmesan Pasta Sauce
- 100g green beans
- 300g fresh filled tortellini (we used spinach and ricotta)
- Grated parmesan cheese
- Cottage Delight Extra Virgin Olive Oil
Method
1. Heat the Cottage Delight Extra Virgin Olive Oil in the frying pan and add the carrots, yellow pepper and cherry tomatoes and cook for 5 minutes until brown.
2. Empty the jar of Cottage Delight Tomato & Parmesan Pasta Sauce into a large saucepan, refill the jar half full with water add the water to the saucepan.
3. Heat the saucepan and add some fresh green beans and the fried vegetables. Add the fresh filled tortellini and cook for a further 5-10 minutes.
4. Ladle the soup into bowls and top with some grated parmesan cheese before serving.
Pear and Ginger Tart
This easy to make Pear & Ginger Tart is a lovely way to enjoy the delicate flavour combination in this award-winning pear and ginger jamServes 5-6
Ingredients
- 20cm ready made sweet pastry case
- 2 x 230g tined pear halves in juice (well drained)
- 250g Mascarpone
- 2 tbsp icing sugar
- 2 tsp vanilla extract
- Half a 340g jar of Cottage Delight Pear & Ginger Jam
Method
1. Mix together the Mascarpone, icing sugar and vanilla extract until smooth. Spoon into the pastry case and spread evenly over the base. Pat the pear halves dry and arrange on top of the mascarpone mixture.
2. Pour the Cottage Delight Pear & Ginger Jam into a sauce pan and gently warm until just starting to bubble. Carefully spoon over the pears to create a generous glaze.
3. Either leave to cool or caramelise the glaze with a kitchen blow torch or under a hot grill if desired.
4. Serve with cream or ice-cream.
