LACTOSE FREE PANCAKES RECIPE

This quick to make recipe is a family favourite…
10 minutes to prep/ 1-2 minutes to cook per pancake

Ingredients (makes six large pancakes):
• 4tbsp plain flour
• 200ml Lactofree Semi-Skimmed
• 100ml Water
• Vegetable oil
• 1 large free range egg
• Salt

Method:
• Sieve the flour into a large bowl and then add a pinch of salt
• Make a small well in the flour and add in the egg
• Stir the mixture with a whisk (or fork)
• Then add the Lactofree semi-skimmed and water to make a batter. Add this to the mix a bit at a time whilst beating to avoid lumps in the mixture
• Heat some vegetable oil in a large frying pan and using a ladle, pour a spoonful of the pancake mixture into the hot pan
• Move the mixture around the pan until the base of the pan is covered
• Cook for 1 min before flipping the pancake to cook the other side. You will know the pancake is ready when it is easy to flip!
• Serve hot with blueberries and maple syrup or a topping of your choice
