It is not enough for hotels to provide a presentable en-suite bedroom with good-enough food these days. With competition for our custom hotting up, the battleground has shifted to the kitchen, with hotels striving to create great restaurants to entice guests. Fortunately, Britain now has a smorgasbord of top chefs to tempt us.

At The Gallivant, near Rye, East Sussex

Trevor trained and cooked alongside Marco Pierre White and Jean Christophe Novelli before going it alone in The Gallivant’s Beach Bistro. Expect the best seasonal ingredients, such as Roast Winchelsea salt marsh lamb – and Trevor’s ƒ sh soup is a must-taste. A stone’s throw from the beaches of Camber Sands and 10 minutes from Rye, the hotel has 20 chic rooms (two with private deck) decorated in a coastal theme.

Larry has worked in Michelinstarred restaurants, such as Raymond Blanc’s Le Manoir aux Quat’Saisons. He o‘ ers modern European, which is light but with intense ’ avour, such as conƒ t Scottish salmon, beetroot, horseradish and apple. Follow with a serving of 70% dark chocolate cream, marinated ƒ gs, buttermilk. The Manor has 28 English country-style bedrooms, more than 12 acres of landscaped gardens, and a heated outdoor pool.

NATHAN OUTLAW

At The Capital, London

Award-winning chef Nathan Outlaw has trained with several well-known chefs, including Rick Stein. His ƒfirst London restaurant, Outlaw’s at The Capital, has just been awarded its first Michelin star. Featuring British seafood that’s primarily caught around the Cornish coast, specialities include crispy oysters, cucumber and British caviar. The Capital is a family-run, ƒ five-star town house with 49 guest bedrooms, located just minutes from Harrods.

MATTIA CAMORANI

At Hotel Missoni, Edinburgh

To produce the authentic Italian cuisine, Mattia Camorani works closely with his mentor, Giorgio Locatelli, using seasonal ingredients such as white and black truffes – Camorani’s signature dish, Tagliatelle all’Emiliana, features succulent pork shoulder in traditional ragu sauce. On 19 November, Cucina hosts a Sicilian evening with Giorgio Locatelli at £50 per head. Located in Edinburgh’s historic Old Town, Hotel Missoni has spectacular views over the city and is in an ideal position for many of the city’s attractions.
