The aromatic perennial, tarragon (dragon’s wort), is rich in antioxidants and phytonutrients. Originating in Central Asia, the herb has traditionally been used to stimulate appetite, and can also relieve hiccups.

The presence of polyphenols (natural chemicals) in tarragon can help to lower blood-glucose levels and other compounds can help to prevent blood from clotting, keeping the heart healthy and reducing the risk of a stroke.

Tarragon has one of the highest antioxidant levels compared with other herbs and also has high levels of vitamins A, B and C, plus calcium, iron and zinc.

It is most commonly used to ‹flavour food but it makes a good herbal tea. Just add a few fresh sprigs – it loses its medicinal properties as it dries – to a cup of boiling water. It will help you relax and sleep easily. To sweeten, add ginger, mint or honey.
