Gennaro’s Classic Tiramisu:

Serves: 4
Ingredients:
250g mascarpone
½ teaspoon vanilla extract
60g sugar
1 Clarence Court Egg, separated
A squeeze of lemon
350ml expresso coffee
100ml coffee liqueur (eg. Kahlua)
200g savoiardi biscuits
Cocoa powder
Grated dark chocolate
Method:
- Make the espresso coffee, pour into a bowl, combine with the coffee liqueur and mix in 30 grams of sugar. Set aside.
- In a bowl combine mascarpone, vanilla extract, egg yolk and 30 gr of sugar and whisk until creamy.
- In another clean bowl, whisk the egg white with a squeeze of lemon until stiff, then fold into the mascarpone mixture until well combined.
- Take a savoiardi biscuits and dip one at a time into the coffee mixture, letting them absorb just enough to keep firm but not fall apart and line a dish with them.
- Cover with a layer of the creamy mixture, following by another layer of coffeeabsorbed savoiardi biscuits, then cover with the remaining cream.
- Top with sifted cocoa powder and grated chocolate. Cover and place in the fridge for a couple of hours before serving.
